This recipe puts a spin on the traditional pasta salad by adding a light and fresh component. Full of flavor with a lower calorie count, what’s better than that! This is also a recipe you can use for meal planning just make sure to package you oil/vinegar/pesto separate from your tomato/avocado/mozzarella so they don’t get soggy.
- Cooked bow tie pasta
- Mozzarella, sliced
- Tomato, sliced
- Avocado, sliced
- Pine nuts
- Balsamic vinegar or reduction
- Olive oil
Once you’ve got everything all sliced up the fun part starts. Place your bow tie past on a plate (Or Tupperware) then place your mozzarella, tomato and basil all layered on the plate. Top it with your avocado, pine nuts then drizzle pesto, olive oil, balsamic vinegar and presto!
