Chocolate Chia Seed Energy Bars

Chia Seed


  • 1 1/2 cups packed, pitted  dates
  • 1/3 cup cocoa
  • 1/2 cups whole Chia Seeds
  • 1/2 cup Unsweetened shredded coconut
  • 1 cup Walnut pieces
  • 1/2 cup chopped Dark Chocolate
  • 1/2 cup oats
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Chia Seed


This one is super simple: toss it all in a food processor until it becomes “dough”-like. Place a sheet of parchment paper in a square or rectangular pan, and spread the dough evenly. Refrigerate for 2-4 hours then take out and cut into bars.
