Zucchini Tuscan Skillet

This is a really great healthy option to pasta. Pasta is an all time favorite comfort food but unfortunately it’s loaded with carbs. Making noodles out of zucchini is a fresh way to get rid of those carbs and still be able to enjoy pasta, guilt free.



  • 1 Tablespoon butter
  • 1½ pounds of skinless chicken breasts, cut into strips
  • 4 oz fresh semi-dried tomato strips in oil, chopped
  • 5 oz jarred sun dried tomatoes in oil, chopped
  • 4 cloves garlic, peeled and crushed
  • 1¼ cup half and half
  • 1 cup shaved Parmesan cheese
  • Salt to taste
  • Dried basil seasoning
  • Red chilli flakes
  • 2 large Zucchini made into noodles



Heat the butter in a pan/skillet over medium high heat.

Add the chicken strips and sprinkle with salt.Pan fry until the chicken is golden brown on all sides and cooked through.

Add both semi-dried and sun dried tomatoes with 1 Tablespoon of the oil from the jar, and add the garlic and saute for 1 minute.While the chicken is browning, make your noodles with a Zoodle maker OR with a normal vegetable peeler.

Lower the heat, add the half and half and add the Parmesan cheese; simmer while stirring until the cheese has melted through.Sprinkle over salt, basil and red chili flakes to your taste.

Stir through the noodles and continue to simmer until the noodles have softened to your liking (about 5-8 minutes) and serve.
