Pecan Pie Bars

Pecan pie is one of my personal favorite holiday pies to make and eat. Downside is I have to wait for Thanksgiving and/or Christmas to have this yuumy treat so I though there has got to be a way. A way to enjoy this great treat without feeling too guilty. So why not make them into snack bars?

  • Crust
  • 1 cup butter (softened)
  • 1 ¾ cup flour
  • ½ cup powdered sugar
  • Pecan Topping
  • 1 cup butter
  • ½ cup corn syrup
  • 1 cup brown sugar
  • 1 teaspoon vanilla
  • 2 cups chopped pecans
  • 2 Tablespoons heavy cream
  • 3 eggs

Preheat oven to 350 degrees.Lightly grease a 9×13 pan and set aside. In a bowl, beat together ingredients for crust until dough forms. Press into bottom of 9×13 pan and bake for 10-12 minutes, or until crust is set. While crust is baking, mix together pecan topping ingredients until smooth. Pour over crust as soon as crust is done baking. Return to the oven for 25 minutes or until middle is set. Cut into bars and serve after cooled.
