Chicken Fajitas; A Perfect Prep Meal

It’s chicken fajita night at my house and I love this recipe so much I thought I should share it with you. These fajitas have a nice spice to them as well as a freshness that really will light your tastebuds on fire! This recipe serves about 8 people or up to 4 prep meals!

Chicken Fajitas

Ingredients

  • 8 Flour Tortillas taco size 8-9 inch (If you want to be really healthy use a whole wheat or spinach tortilla)
  • 1 1/2 lbs chicken breasts skinless, boneless
  • 3 bell peppers red, yellow, green
  • 1 medium onion
  • 1 tsp cumin powder
  • 1 tsp garlic powder or minced garlic
  • 2 tsp paprika
  • salt and pepper to taste
  • 1 tbsp vegetable oil

Garnishes for serving (optional)

  • 6 lime wedges
  • 1 tbsp fresh cilantro chopped
  • sour cream

Directions

Preheat oven to 400F degrees. Set aside a large baking sheet.

Cut chicken breasts into 1/2″ x 2″ strips using a sharp knife, and set aside. Then cut onions and peppers into similar sized pieces.

Place peppers, onions and chicken onto the baking sheet. Sprinkle on cumin, garlic, paprika, salt and pepper. Drizzle with oil and top all ingredients to coat evenly.

Bake for 15 minutes. Remove from oven, and push the ingredients aside to make about 6-inches of space for the tortillas. Return to bake for 5 more minutes.

Remove from oven and squeeze optional fresh lime on top. Add chicken mixture to hot tortillas garnish with cilantro and sour cream. Serve and enjoy!
