Mushroom & Farro Soup


2 tbsp butter
1 Small onion diced
1 – 8 oz container of mushrooms of choice
1/2 cup minced fresh parsley
3 cups of Vegetable broth
3/4 cup of Farro
1 tbsp of Sherry
Cracked black pepper



Heat butter in a saucepan over medium heat, add onions and mushrooms. Cook until mushrooms are nice and brown, the onions should start to caramelize (about 8-9 min). Add parsley and cook for 2 more minutes. Add broth and bring to a boil, stir in farro and reduce heat to a simmer for 20-30 minutes. Add sherry and black cracked pepper stir and serve.
