It’s Pizza Day!! Pesto Cheese Pizza to be Exact!


1 – whole wheat pizza dough
2 cups (packed) fresh basil leaves
1/4 cup pine nuts
1/4 cup grated Parmesan cheese
3 tbsp extra virgin olive oil
2 tbsp H2O
1 large Garlic clove quartered
1/2 tsp Salt
1/2 tsp Fresh cracked pepper
1/4 cup part – skim ricotta cheese
1/4 cup shredded Mozzarella Cheese



Preheat your oven to 425 degrees. Grease your pizza pan and spread your dough evenly. Time to make your fresh pesto, place basil, pine nuts, parmesan cheese, oil, water, garlic, salt and pepper into the food processor. Blend until smooth. Spread pesto onto the dough evenly, then spread ricotta on top of the pesto. Sprinkle your mozzarella and bake for 20 minutes.
