Who said pizza can’t be healthy!
1 tsp Olive oil
1 white onion, sliced
1 tbsp balsamic vinegar
1 multi-grain flatbread
1/4 cup ricotta cheese
1 minced Garlic clove
2 fresh figs, quartered
Handful of Arugula (or parsley if you don’t care for arugula)
Preheat your oven to 350 degrees. In a medium saucepan, heat oil and onions until they become slightly translucent. Add in balsamic vinegar and cook until onions are soft and the vinegar has evaporated.
Warm the flat bread in the oven for 5-10 minutes.
Mix ricotta cheese and garlic in a small bowl. When your flatbread is ready spread ricotta mixture evenly and top with onions, figs and arugula(parsley).
